Lemon Vinaigrette

I recently mentioned my head-over-heels love for the lemon vinaigrette at Liberty Market in Phoenix, and my desire to recreate it. I started my effort with this recipe from Bon Appetit. Not quite the same, but delicious nonetheless. It was even better after sitting in the refrigerator for 2 or 3 days.

Lemon Vinaigrette

I'm going to keep trying for that Liberty Market amazingness (they kindly shared with me on twitter that I need to throw in some fresh thyme), but in the meantime, this is a worthy jumping-off point.

Lemon Vinaigrette
Adapted from Bon Appetit
Printable Recipe

1/2 cup olive oil
3 tablespoons fresh lemon juice
1 tablespoon minced shallot
1 1/2 teaspoons Dijon mustard
1/2 teaspoon grated lemon peel
1/2 teaspoon sugar

Whisk all ingredients in bowl to blend. Season with salt and pepper.

This is my favorite easy salad dressing. Or rather, this general idea, as I never bother measuring the ingredients anymore. I've also done it with orange zest and a bit of orange juice (not all orange juice, it's not acidic enough), and it's delicious--especially over some greens with sliced oranges and thinly sliced fennel.
