"Baked" Apples

When I was visiting my mom last weekend, she made this treat for me and I feel like I need to share it with the world. It's the best snack ever. If you're not feeling health-conscious, feel free to substitute regular sugar or soda for the calorie-free varieties.

You'll need:
1 apple
Diet soda (any kind)
1 packet no-calorie sweetener (I like Splenda)
Cinnamon















Core the apple and place it in a bowl that's small enough so the apple stays upright. My corer has a slicer, so if yours does also, make sure the bowl helps the apple keep its shape. Pour soda into the hole where the core was (just a few tablespoons should do it), and sprinkle with half a packet of sweetener and cinnamon. Cover and microwave 2-3 minutes. For an extra treat, top with a bit of fat-free cool whip.

If you're doing Weight Watchers, this is only 1 point... a small miracle if you ask me!
