Hello little bloggie! I've missed you! I haven't played house so much in the last couple weeks (like I had been at least), so not much to report...but I'm hoping to get back in the swing. Outlook good for August.
I decided to do Wednesday Baking last week (I had been on the fence about continuing the tradition). I had a big bag o' lemons and lot of buttermilk leftover from the previous week's strawberry shortcake, so I plugged "lemon" and "buttermilk" into my trusty food blog search and found Springtime Lemon Buttermilk Cupcakes. Bingo!
The author of the recipe is Nicole Weston. I've been following her since I started reading blogs a long time ago (ok maybe 2 or 3 years). She used to write for Slashfood (the site that the recipe came from and how I originally started liking her), and broke off to write her own blog, Baking Bites, a while back. I really like her style, but don't think I've ever made one of her recipes before now! I was pleasantly surprised to see that that recipe was the first thing to pop up in my search.
They were yummy. I modified the recipe a little bit...she suggests subbing lemon zest for the extract, so I did. I also stirred the dry ingredients instead of sifting, cuz I like livin' on the edge...and obviously didn't use egg-shaped cups.
I didn't use her icing recipe, though, because I didn't have enough powdered sugar and was trying to save myself a trip to the store. So, Mr. Bittman to the rescue once again. Vanilla Butter Cream Frosting, pg. 727. I halved the recipe, and it wound up being so disgustingly sweet that I only used about 1/3 of what I made. Everyone seemed to like it, so I don't feel bad (don't I say that every time?), but next time I'd look for a different frosting recipe. I don't quite know where I went wrong...the consistency was a little strange as well.
